These two blue cheese fondue recipes will impress the blue cheese lovers amongst your friends and family. These fondue recipes have a stronger taste than most cheese fondue because of the blue cheese.
There are two variations for you to try: one with Brie cheese and one with Monterey Jack and cream cheese.
Blue Cheese and Brie Fondue

Large Shiitake Mushroom Caps, Diced

Dry White Wine

1. In a large pot over low heat, melt the butter.
2. Add the green onions and mushrooms and cook until soft.
3. Add the thyme and wine and let the mixture simmer.
4. In a medium bowl, mix the cornstarch with the pieces of Brie.
5. Add the blue cheese into the bowl and mix.
6. Gradually incorporate your cheese mixture into the pot, one handful at a time.
7. Once the cheese has melted, transfer the mixture into your cheese fondue pot.
